Caesar salads have always been a favorite of mine and this recipe definitely reinforced that for me. The dressing was really a lot simpler than I thought. A few eggs, some lemon juice, Worcestershire, olive oil, and a few household spices were all that was necessary. I've heard that anchovies are one of the staples of a good Caesar but they're just a little too salty for me. A substitution I found online suggested using Kalamata olive juice to get that savory kick provided by the anchovy. I would rate this recipe at a solid seven or eight.
