On Friday's during Lent, I am not supposed to eat meat, so lately I have been experiencing on cooking fish and other seafood instead. I love seafood, and shrimp is my all time favorite! I thought this was a unique recipe(found on page 325, soft cover) with the tomatoes. The bread crumbs were a little crispy in the end, but it still was tasty!
I added fresh lemon to the dish, something a little extra and goes well
with shrimp. My boyfriend, who is not a huge seafood lover, tried it,
but ate more homemade mashed potatoes and salad for dinner. More shrimp
for me :)
