Onion Soup
The smell of onions has been wafting around me for a while... in addition to the onion stock made in class, my roommate was experimenting with using onion skins as a natural dye for fabric. So, because of all this, I was really wanting to make onion soup. It's on page 53. It was really simple to make (just be prepared to tear up a little, because of all the onion cutting!). The only things I did differently was switching the thyme for oregano, and I decided not to bake the soup. It was really good. If I decide to make it again, however, I might put a little bit of carrot in the soup as well. -Deidra A
