Challenge Recipe 1, Zucchini Pancakes

To replace the egg and wheat flour, I chose to use a flour made of Garbonzo Beans, Potato Starch, Tapioca Flour, White Sorghum Flour, and Fava Bean Flour and Buttermilk for the egg. Getting the right consistency was difficult, especially when forming the patties. Other than that, this was a fairly straightforward recipe. I treated some guests to the final product and many of them said it tasted as if it was somewhere between hashbrowns and a veggi burger patty.
