Hoppin' John

The first recipe I chose was the Hoppin' John (page 436 of the text book). The recipe called for fairly simple ingredients with a cook time of about 2 hours, mostly unattended. I found that the final product had a good texture but could have used some more spice. Personally I added some chili powder, garlic, and extra salt, and black pepper to my own dish. My last picture shows this dish along side with some garlic apple marinaded pork chops to bring the whole meal together.
