Vegan Stuffed Mushrooms

I made the Stuffed Mushroom recipe on page 113 of the red cookbook. I did however make some modifications. I made these for two of my vegan friends so I found some substitutes for the egg and I just eliminated the cheese. Instead of one egg I used 1TBS flaxseed + 3TBS water and just a tiny bit of chia seeds to make the gel texture. Also instead of parsley I used the Bulgarian spice from Penzy's Spice Shop.
Overall they tasted fantastic! I had leftover stuffing that I put on some French bread. I would definitely make it again.
