Baked Apples

Bittman's recipe for baked apples is on page 384. One of the many variations suggests using maple syrup instead of sugar. I chose to use this one because the apples I had on hand were more sweet than tart, so extra sugar wasn't really important.. I added a little nutmeg, pumpkin spice, and cinnamon to basically make what would be the filling of an apple pie. This ended up being a pretty decent desert with a really short prep time. With a little extra effort you could serve these with a selection of pastries or on top of any grilled meat to make them a more fulfilling meal.
