Vinaigrette Salad Dressing

The recipe can be found on page 199 of Bittman's book. I decided on a dressing because the last lab we had the dressing was fantastic and I wanted to attempt to remake it. Since I made this recipe I have used it in multiple salads (which is rare for me, but starting to become a thing now since it's so tasty). I made a few adaptations that were in the suggested section of the recipe. To the red wine vinegar and olive oil I added maple syrup and some "all natural and organic" (loosely translated from Italian, picked it up in Tuscany) honey. Overall it was very simple and quick. I will continue to make my own dressing to save money and have the flavors I like in it.

EMULSION!!

Final product of yumminess!
