Blueberry Oat Muffins

This week I decided to look through my recipe box and dig out a recipe I had written down and haven't used in awhile. I found a Blueberry Oat Muffin Recipe- not sure where I got it from, but it sounded really good for an afternoon treat while studying and writing a paper.

Ingredients:
1 1/4 cup flour
1 cup quick cooking oats
1/2 cup sugar
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 egg whites
1/2 cup water
1/3 cup vegetable oil
1 cup fresh or frozen blueberries

Topping: 2 tbsp sugar and 1/2 tsp ground cinnamon

In a bowl, combine thee first 6 ingredients. In another bowl, beat egg whites, water and oil. Stir into dry ingredients just until moistened. Fold in blueberries. Fill paper-lined muffin cups 3/4 full.


Combine sugar and cinnamon; sprinkle over muffins. Bake at 400 degree for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

Makes one dozen.
Note: If using frozen blueberries, do not thaw before adding to the batter.

These muffins are really moist and the they taste the best for an afternoon snack with some warm Cran-apple cider with mulling spice or as a breakfast side!!
