Eating like kings (or hippies) on the road!

This weekend, I attended the Community Initiatives in Sustainable Agriculture (CISA) conference at Lawrence University in Appleton, Wisconsin.  A lot of awesome info was gleaned from the workshops and panel discussions and a good deal of fresh, responsibly produced food was served.  In the hustle and bustle of the weekend, I barely had time to assemble a meal for myself.  Driving home this afternoon, we were feeling the hunger creep in and had pretty much given up on finding some quick but decent food between Appleton and Minneapolis.  After passing through the Main St. of Steven's Point and realizing nothing was open, we started heading towards the freeway.  But wait, what's this?  A quiet, modestly sized food co-op on a corner?!  Perfect!  We went in and found 3 ingredients we could all agree on to make a simple, fast and delicious meal: Sandwiches!  If you must consult Bittman on his views of the bread cleaved by food that we love to consume somewhere around noon, you can start on page 266 in the soft cover and learn a great deal about the practicality of various ingredients.  In our case, we could eat right away but it was in the car so cleanliness, health and taste were the primary concerns.  Having purchased some AWESOME whole wheat bread with millet and sunflower seeds, jalapeno hummus and swiss chard (that they let us wash in the back, I love co-ops!), we assembled all three into some delicious, interesting and hearty meals.
