Omelete

I've never been good at making omelets, and my attempt this week wasn't spectacular. It tasted fantastic, but didn't look the prettiest. It was hard to understand Bittman's instructions on cooking the eggs by "pushing the edges of the eggs toward the center." So, the eggs turned out to be a little uneven. I feel like I also had too much egg for to small of a pan, so the egg layer was very thick and hard to fold.



In the middle, I added sauted kale, dill, and brie. 






After a failed attempt at folding in thirds, I just settled for folding it in half. It turned out to be a delicious combination!
