Roast Pork with Sage and Potatoes

A few weeks ago there was a fantastic deal on pork roast at the grocery store, and I just couldn't resist getting it. This was my first time ever making a roast, and so I followed the recipe on page 465 to make sure I cooked it fully. The proportion of ingredients I used differed a little from the recipe; basically I used less potatoes and more seasoning. Also, my apartment completely lacks a roasting pan, and so I used a saucepan instead! This still worked great. It turned out deliciously! Now I have lots of pork to work with over the next couple days. A disclaimer on the final product: it did not photograph well at all. It looked much more appetizing in person. -Deidra A
