-Brown Rice/Veggie Mix & Black Beans-

For this last week's meal, I decided to make a rice and beans dish. This wasn't necessarily a meal from Bittman, but I wanted to post it anyways! I used the brown rice I bought at Trader Joe's for the challenge recipe, and everything else (black beans, bell peppers, onions, shallots, and garlic) I already had at home. The rice took about 35 minutes to cook, so I started that first. Next, I chopped up the vegetables, and sauteed them in a pan with some olive oil. When the rice was finished, I mixed in the veggies. Last, I heated up the black beans, and served the two together. It ended up being very delicious! I had it for both lunch and dinner. :)
