Zucchini Pancakes!


For this challenge recipe I got to try a new food as well as new ingredients! To replace the flour I used cooked quinoa. This seemed to work extremely well but was a bit crunchy. It was a bit complicated to figure out what ingredients to replace in order to get the correct consistency. I was a bit disappointed making this for dinner because I thought it would be more filling, but overall I did enjoy the pancakes. I would recommend using the quinoa as substitution for flour. I got the idea for this from looking through my food science textbook from last semester.  If I ever made this recipe again I would try using rice or a different kind of flour such as almond flour.
