Since I worked doubles all weekend, I made breakfast out of Bittman. On page 748 (softcover) I discovered Light and Fluffy Pancakes. It took longer to cook them than what it said, but perhaps it was the stove. They turned out to be really light and fluffy, just not sweet; which was strange because I added more sugar. I had them with some blueberries and blueberry syrup, and it was a little sweeter. These were not my favorite pancakes overall, I am going to research different pancake recipes and see what the difference is this week because that is one thing I do not make from scratch much. Hopefully I will soon with a great recipe!
