Meal Planning on a Budget

2 Tbsp peanut butter (0.14)
8 oz milk (0.20)

Lunch ($1.23 per serving/ $4.92 total)
Grilled Cheese
2 slices toast (0.28)
1 oz cheddar cheese (0.36)
1/2 cup tomato soup (0.40)
4 oz carrot sticks (0.19)

Dinner ($1.63 per serving/ $6.52 total)
Spanish Rice
1/4 cup brown rice (0.14)
1/2 cup crushed tomatoes (0.65)
4 oz ground beef (0.72)
1/2 cup cabbage (0.12)

Starting out the day, I had high hopes for keeping my meal plan within the budget. Planning something for dinner was where the challenge began. Thankfully, the cheap go-to ingredient rice works great in plenty of different dishes. Assuming the household has spices on hand, I think all three of these meals would be acceptable for a family of four.
