Challenge Meal Plan


Breakfast: scrambled eggs with toast
·      5 eggs – scrambled: $0.83
·      4 oz cheddar: $1.93
·      4 breakfast sausages: $2.20
·      4 slices toast: $0.32
·      butter: free
·      Salt/pepper: free
o   TOTAL: $5.28

Lunch: veggie and hummus wraps
·      4 tortillas: $1.16
·      8 oz. Hummus: $1.64
·      1 Cucumber: $0.89
·      4 pieces Lettuce: free
·      1 green pepper: $0.69
o   TOTAL: $4.38

Dinner: red beans and rice
·      2 cups brown rice: $0.50
·      2 cups dry red beans: $1.99
·      2 cup broccoli: $1.99
o   TOTAL: $4.48

GRAND TOTAL: $14.14!

It is amazing to me that it is possible to feed a family of four three meals for under $15. I had no idea that raw ingredients are so cheap compared to ready made food. This challenge definitely taught me that it is better to prepare my own food rather than buy freezer meals or go out. It also helped me realize that it is possible to feed a family with a small budget if you shop for the right ingredients.
