Simplest Omelet

The other morning, my roommate and I wanted a delicious breakfast but didn’t want to have to walk out in the cold.  So simple solution-- I opened my Bittman book and flipped to the breakfast section. After looking in my fridge, an omelet seemed like the perfect idea.


I decided that I wanted to put spinach and onions in my omelet so I sautéed those up with some olive oil in the pan first.

 

 

 I transferred them to a plate and followed the recipe given in the book for the omelet. Once the egg part was done cooking, I put in the spinach and onion and some shredded cheese and folded it over.



 


The end result was tasty and a lot easier (and warmer) than having to go out to breakfast
