Fruit Fritters

On account of having some bananas that I needed to use before they got bad, I looked through the cookbook with the intent on finding something creative that I could use a banana in. I found fruit fritters, on page 651. You can use a wide variety of fruit with this recipe, but I used apples and bananas. I would recommend cutting the batter in half, because I used the full recipe but added extra fruit and there was still way too much batter left over. The fritters also got a bit soggy very quickly; I think this might have had to do with the moisture in the fruit softening the batter. But regardless, they were still pretty good. I preferred the apple over the banana. -Deidra A
