Salad with Fruit, Cheese and Nuts



I made a delicious and light dinner for two of Greens with Fruit, Cheese, and Nuts (203). I used spring greens mix, raspberries, brie, red bell peppers, and a dried fruit and nut mix. This mix had dried cranberries, golden raisins, almonds, and sunflower seeds. I also made balsamic vinaigrette with balsamic vinegar, olive oil, shallot, and maple syrup. This was a very filling and satisfying salad with the protein from the nuts and cheese. It was such an easy, fast, and adaptable dinner that I would definitely make again.
