Fried Chicken Breasts

I have a lot of lettuce this week, so I wanted to make something that would go well with a salad. I thought strips of fried chicken might do the trick! This recipe (pg 386) was actually quite simple. I didn't try anything crazy, although I would recommend a saucepan. I had originally tried frying in a skillet, but the oil splattered everywhere so I transferred to the saucepan. The chicken was really tasty. The coating wasn't as crisp as I usually like, but the recipe did state that it wouldn't turn out that way so I wasn't disappointed. -Deidra A
