Chicken Caesar Salad with Garlic Croutons

This weekend I made a chicken Caesar salad. The recipe is found on page 96(soft cover). I stuck with most ingredients besides the egg. My boyfriend was not crazy about the eggs, he is a really picky eater (lol) so I thought mayonnaise would be the closest thing for a substitute. It worked really well. Instead of using the egg, I added 1/2 cup of mayo. The dressing had a really strong taste of lemons, so I added a bit more mayo, and honey to make it a bit sweet. Also I made garlic croutons (page 82 soft cover) and added chicken and tomatoes for toppings with grated Parmesan cheese. Overall the salad was really fresh and I added berries on the side!
