Challenge Recipe #2

3 Meals on a $15 Budget

Breakfast: $3.86

4 c Oatmeal = $1.72
½ c frozen strawberries = $2.13

Lunch: $5. 97

Pasta Salad:
13 oz Whole wheat penne: $1.69
1 Green Bell Pepper: $0.25
3 scallions: $0.40
2 carrots: $0.33
Kale = $0.89
1 lemon: $0.79
¼ Vegetable oil: $0.12
½  8oz block cheddar cheese, chopped= $1.50

Dinner: $5.13

Hashbrowns: $1.06
            4 potatoes @ $0.25 ea = $1.00
            2 tbsp oil = $0.06

Veggie and Cheese Scramble: $4.07
8 eggs = $1.33
½ c skim milk = $0.12
¾ c frozen peas= $0.34
½ onion, chopped= $0.50
1 green bell pepper= $0.25
½  8oz block shredded cheddar cheese= $1.50
1 tbsp oil =$0.03

Total = $14.95

I decided to use the staple "cheap" foods to be the basis of my meals: eggs, potatoes, pasta, and oatmeal. I also made use of frozen strawberries and peas to enhance shelf life and lower cost. I think these meals would be very satisfying, and they have a variety of food groups. I even came in five cents under! The only sources I used was Rainbow Grocery store for food prices.
